VEGAN PROTEIN PANCAKES

- 85g Gluten Free Oats
- One Sachet of OTE Soya Chocolate Protein
- 1 Medium Banana
- 325ml Unsweetened Soya Milk (or feel free to use alternative plant milks)
- 1 tsp of Coconut Oil for cooking in.
Firstly blitz the oats in a food processor to make oat flour. Then simply add in all the other ingredients and blitz to a perfect batter. Alternatively you can of course mix by hand but you would need to mush the bananas before hand.
Once your happy with the consistency of the batter it’s time to heat the pan. Melt the teaspoon of Coconut Oil over a moderate heat. Once the pan is hot enough pour in your batter. Now don’t go to town with the first one, as you have to accept with pancakes the first one is always the worst. The second one will be a better one! The mixture is quite thick, and may need quickly spreading with a knife once in the pan.
We recommend around 2 mins 20 seconds on each side depending on thickness. This mixture won’t bubble like your usual pancake mixture, but you will see the edges start to solidify.
This mixture made 4 good sized pancakes. This could be a good snack for two people or a hearty stack for one person. We topped with a few slices of banana, a sprinkle of shredded coconut and a drizzle of Agave Syrup.
