Just put it all in a big pan and just let it gentle simmer for around 40 minutes. For the flavours to intensify, leave it overnight ready to use it the next day.
If you are looking to make your mince pies EXTRA healthy, then instead of using normal sweet pastry use filo pastry. It is a much lighter option with less calories! Using 4 squares of filo pastry arrange them so when pushed into a muffin tin they will form a deep cup to fill with your delicious mincemeat.
