Peanut butter on toast 5 ways

Bored of standard toast. Want to jazz it up a bit? Toast is one of the best snacks for the time poor and the perennial rusher but it doesn’t have to be the same everyday. Below are a few routes to some interesting new takes on the humble peanut butter on toast. 

INGREDIENTS

  1. Peanut Butter with Caramelised Apples
    • 1 red eating apple (such as Cox or Braeburn), finely sliced around the middle
    • 1 lemon, cut in half
    • 20g unsalted butter
    • 1 heaped tsp light muscovado sugar
    • 2 tbsps Whole Earth Peanut Butter (Smooth or Crunchy)
    • 1 slice of bread, toasted
  2. Peanut Butter with Edamame & Coriander
  3. Peanut Butter with Butternut Squash & Rocket
    • 75g butternut squash, roasted
    • 2 tbsps Whole Earth Peanut Butter (Smooth or Crunchy)
    • 1 slice of bread, toasted
    • 25g rocket
    • 15g mixed seeds, toasted
    • ¼ of a lemon wedge
    • Salt & pepper

  5. Peanut Butter with Honey & Flaky Sea Salt

HOW TO MAKE IT

  1. Peanut Butter with Caramelised Apples
    1. Remove any pips from the apples and rub the apples with the cut halves of lemon.
    2. Melt the butter in a large frying pan and when it starts to bubble, add the apple slices to the pan.
    3. Cook over a medium heat for 5 minutes until the apples are soft and beginning to take on some colour.
    4. Sprinkle over the brown sugar and continue to cook until the sugar melts and the mixture thickens (about 3 minutes).
    5. Spread the peanut butter evenly over the toast and top with the caramelised apples.
  2. Peanut Butter with Edamame & Coriander
    1. Spread the peanut butter evenly over the toast.
    2. Top with the edamame beans and a few coriander leaves.
  3. Peanut Butter with Butternut Squash & Rocket
    1. Mash the butternut squash with a fork until smooth and season with salt & pepper.
    2. Spread the peanut butter over the toast and top with the mashed squash.
    3. Top with the rocket and seeds and squeeze over the lemon.
  4. Peanut Butter with Quick Berry Compote
    1. Place the berries in a small saucepan with the honey or agave.
    2. Cover with a lid or a with foil and place over a low heat for 3-4 minutes until the berries have softened completely and are warmed through.
    3. Remove the lid and gently crush the berries with a fork.
    4. Spread the peanut butter evenly over the toast and top with the berries.
  5. Peanut Butter with Honey & Flaky Sea Salt
    1. Spread the peanut butter evenly over the toast.
    2. Drizzle over the honey and top with the salt.

YOU’LL NEED
